Hakodate Brewery is a dynamic sake producer rooted in southern Hokkaido. With a passion for creating sake that complements the region’s rich culinary culture, the brewery combines a forward-looking vision with time-honored craftsmanship.
Its signature sake, Gohho, is made exclusively with premium Hokkaido-grown rice such as Ginpu, Suisei, and Kitashizuku, cultivated by local contract farmers. Brewing water comes from the crystal-clear underground streams of Mt. Yokotsu, known for their exceptional purity.
Another defining feature is in-house rice polishing. By adjusting the polishing ratio for each rice variety, the brewers bring out its unique character and natural flavors.
